Quickie Green Brekkie Bowl

Breadless brekkie idea 💡
Green brekkie bowls are not just for cafes you can make a super quick healthy version at home on your own with things you'll have on hand!
Snap frozen peas are underrated and buying organic means your getting healthy fiber-full, nutrient and vitamin rich veggies super quick!
If you are having them out always ask for dressing if they use any on the side and use it minimally if at all, most of the time the veggies speak for themselves 💚
Ingredients
1/4 cup red onion diced
1 cup frozen organic peas
2 large bunches chopped Chinese broccoli
1/2 cup Coriander chopped optional
1 carrot sliced or radish shaved
1 tsp extra virgin unrefined coconut oil
Chilli fresh sliced
Pre-made and keep in the fridge
2tbs home made hummus
Egg to your liking or poach or soft/hard boiled on the day
In a pan melt coconut oil and brown onion on med heat stirring occasionally with a wooden spoon.
Add frozen peas, cook on med heat for 2 mins stir with a wooden spoon add the chopped Chinese broccoli and stir until wilted approx 2 mins.
Remove from heat and stir in one tbs tamari or Himalayan mineral salt to season.
Option to stir through coriander now.
Add the green mix to a bowl and top with chilli carrot hummus and your choice of egg.
I like a hard boiled egg so I make them the night before. Hard boiled eggs can be stored in or out of the fridge keep them in there shell and use when needed.
So Easy!
This brekkie will satisfy and keep you feeling full until lunchtime!
